Cotton Soft Japanese Cheese Cake

Assalamualaikum..


Salam Hari Selasa..kek nih memang famous satu ketika dulu...ramai dh blogger2 yang buat..sorry tak dpt nak list out semua kwn2 yg dh buat...sbb tak dan nak terjah..lagipun Cb pun baru jer buat blog ni....cuma yg terbaru ari tuh ade perasan Kak Anna buat...terliur tgk siap ade topping...semalam tun_telani pun ade ckp nak buat japanese chiscake...selepas berjaya dgn sukses sekali buat slice chiskek tuh hihihi....dok jenguk byk kali tak update lagi hihih :) ..CB amik resepi nih dr  alma myresepi..dan ade jugak rujuk kat kak anna punye blog...Thnks kepada alma dan sis anna kerana berkongsikan resepi dan tips.

Resepi  Cotton Soft Japanese Cheese Cake : Alma
(Cb olah dan ubah suai sikit utk senang faham dikemudian hari)

Memula sekali kena lapik loyang spring foam dgn alumunium foil..tp kalau guna loyang biasa pun boleh..boleh rujuk kat sini yer Kak Anna . Banyak tip yang kak anna tulis kat situ..

Bahan A (Step 1)
( bahan di double boilerkan bersama)

250gm cream cheese
50gm butter
100ml fresh milk

Masak kesemua bahan di atas menggunakan kaedah doube boiler..kacau sentiasa sehingga semua cair dan sebati. Tutup api..ketepikan sehingga sejuk.

Bahan B (step 2)

6 biji kuning telur
60 gram tepung superfine / tepung kek - sy guna superfine
20 gram tepung jagung
1/4 sudu kecil garam - tak letak
1 sudu besar jus lemon -sy letak jus limau nipis

Lepas bahan A sudah sejuk. masuk kesemua bahan B dalam bahan A. Kacau guna senduk kayu sahaja. Asal sebati udah memadai.

Bahan C (step 3)

6 biji putih telur
140gram gula castor
3/4 sudu kecil jus lemon - tak letak

Dalam bekas yang berasingan , pastikan bekas bebas dr segala minyak,kuning telur tak boleh ade setitik pun  @ bahan basah yang lain. Pukul putih telur dgn jus lemon sehingga berbuih kecil..Masukkan gula castor sikit demi sedikit..menggunakan high speed..putar sehingga bertanduk (soft peak) atau kental (terbalikkan bekas,meringue tak jatuh) 

Ambil 1/3 adunan C ini masukkan kedalam adunan cheese td (adunan A+B) . Menggunakan spatula, kaup balik adunan ini . ulang sehingga  adunan meringue selesai.  makesure Tak boleh terlebih kaup. Asal semua sebati sudah cukup. pastikan warna adunan sekata. jika ade putih2 tuh means..masih tak sebati adunan itu.

Bakar menggunakan kaedah bain marie. Dengan menggunakan suhu 160 darjah, bakar  selama sejam atau sehingga masak. Bila dah masak biarkan kek dlm oven dgn pintu oven sedikit renggang lebih kurang 1/2 jam. CB  guna springfoam..kek die mengecut sikit..so tak payah nak sisip dah..cuma tang bahagian dasar tak lapik baking paper..sbb stok habis..tp tak menjadi masalah pun..senang aje bawa keluar dia..hihihi

nih la kaedah bain marie.kena guna 2 loyang..layang yg 4 segi tuh tuang air panas
